Binimare 2021
Binimare pairs excellently with Asian cuisine such as Japanese, seafood and caviar.
We present our new rosé wine Binimare 2021, made from 100% of the native Mallorcan Mantonegro grape. During the harvest month (September) all the grapes are hand-picked in individual 12 kg boxes. In the same field a first selection of the fruit is made and once in the winery, a new selection is made by hand.
The grapes that make up Binimare are first fermented in 500L soft toasted oak barrels and then aged for 4 months on the lees in steel tanks. This is how this pale salmon-coloured wine is obtained.
On the nose, Binimare is reminiscent of tropical fruits such as passion fruit, Paraguayan and litchi with a slight final aroma of white flowers. On the palate, the entry is smooth and the acidity is well incorporated. The finish is persistent, long and elegant with hints of strawberry.
