Finca Biniagual Mantonegro 2019
An unsubdued, fresh, elegant, and sincere wine. A monovarietal wine which transfers us to the Balearic countryside and its Mediterranean culture.
In the nose, red fruit with ripe cherries, floral touch and caramel. On the palate great finesse, delicate and elegant, with soft tannins and much volume.
For this wine with a limited production, we select the best grapes of the autochthonous variety, Manto Negro, from our own vineyards. They are harvested by hand in small cases of 12 kg. After a second selection in the cellar, the alcoholic fermentation takes place in a 3.000 liter French Foudre, used for three wines before. The for the malolactic fermentation we use a French Foudre with 1.600 liters capacity, where the wine is also aged for 11 months.
Like for all our wines, also for the Mantonegro we only use grapes proceeding from our own vineyards that surround the winery and hamlet of Biniagual. The Manto Negro in particular proceeds from a 12-hectare vineyard traditionally named “Ca’n Catorra”, located 140 meters over sea level, northern latitude.
The soil is rich in limestone and clay, with abundant pebble stones on the surface and little water retention.
