For this limited production wine, we select the best grapes from our Manto Negro and Syrah vineyards. The grapes are harvested by hand in 12 kg crates. After the first selection in the field, a second selection takes place in the winery, also by hand. For fermentation, we use 500-litre French oak fermentation barriques and 4,600-litre steel tanks. The lactic acid fermentation takes place in new French oak barrels.
