Intense nose with aromas of blueberry and black cherry, a hint of liquorice and herbs like rosemary and thyme. Palate: marked tannins testify long life and freshness. Roasted nuts and liquorice in the aftertaste. Voluminous and lasting.
The grapes are selected and harvested by hand in small boxes of 12kg, then once again selected manually in the cellar. Fermentation takes place in stainless steel tanks of 4600 and 8850 litres, where the grapes macerate in between 20 and 25 days. The malolactic fermentation takes place partly in stainless steel tanks, partly in concrete tanks and another part in wooden barrels.
For the 15 months ageing process, we use medium toasted oak barrels, of which, 80% are made of French and 20% of American Oak. 70% of the barrels are new, 30% have been used for ageing one wine before.
